My Kids Eat Sautéed Spinach!

Yes, I wrote a bragging headline. But hey, how many 7- and 4-year-olds do you know who willingly eat sautéed spinach?? Not many I bet. Frankly, I was shocked when I covertly watched each boy look at the spinach on his plate, pick it up with his finger, study it closer and then pop it in his mouth. And then they picked up their forks and ate more!

It was my top achievement of this Thursday. All in all, I cooked a great supper tonight -- baked tilapia filets with an herb/olive oil/lemon/panko topping. Sautéed spinach, baby portabella mushrooms and garlic. And rice pilaf from the box. Hey, not everything can be gourmet.

Today was crazy and hectic and frankly, kind of a stressful work day. I am looking forward to Friday at 5....

Special thanks to my mom who babysat for Violet and Bo today. It sounds like they had a great time together. Mazy was green with envy when he and I left for school and work this morning. But he is enjoying his first few days of second grade and reports that he has not been talking too much.

This was our temporary clothes rack in the dining room. We tagged 130 items... and sold 45. Oh well, at least all those that didn't sell were donated to a local charity. We have receipts to use it as a tax-write off and even better, all of these clothes are no longer taking up space in my house.

Have a WONDERFUL Friday, everyone! The kids and I will be enjoying a Movie Night tomorrow while Shawn goes to game night.
